The demand for mawa increases suddenly on any Teej-festival in India. On the other hand, with the onset of summer, the effect on milk production is visible. In order to maintain synergy between the supply and demand of milk, the local administration has banned Mawa and sweets made from Mawa at many places. As a result, Mawa starts disappearing from the market.

The shopkeepers who prepare Mawa by bringing milk themselves, they increase the price of Mawa. The price of mawa is running around Rs 300 per kg in the Delhi market. Due to the large demand and decreasing supply, the supply of fake Mawa i.e. Khoya (Adulterated Khoya) has increased in the market. However, the administration also runs a massive campaign to catch adulterated khova on festivals. Even after this, by throwing dust in the eyes of the adulterated administration, they supply fake Mawa (Adulterated Khoa) in the cities.

Talking about Delhi-NCR, the work of making adulterated khova is done on a large scale in many villages of Hapur, Noida and Bulandshahr. From these places, trucks of fake dry fruits come to Delhi by supply.

how to make adulterated mawa
In the countryside of Delhi-NCR, starch, iodine and potato are used to make and increase the quantity of adulterated mawa at kilns. Mawa is prepared by mixing vegetable ghee in milk powder. Sweet potato, water chestnut flour and maida are also used in this.

Some people mix urea, detergent powder and substandard vegetable ghee in milk. Washing powder, refined oil, water and pure milk are mixed together to make synthetic milk. In this way 20 liters of synthetic milk is prepared in one liter of milk. Then mawa is prepared from this milk. Chemicals are used to give attractive color to Mawa.

Adulteration in Khova can be identified by iodine test or taste and its taste and color. To avoid adulteration, test it thoroughly. The taste and color of adulterated or fake khova is different from normal and some is worse.

To identify the real mawa, add two-three drops of iodine tincture to the mawa. The color will turn red when it is real mawa. On mixing, the color of mawa will turn black. Similarly, pure mawa leaves greasiness when rubbed, while adulterated mawa gets separated by becoming a light in mashing. Put some sugar in the mawa and heat it. If it starts releasing water then the mawa is fake.
